Stauning
Stauning, founded by a diverse group of nine friends, is based in a small village on the west coast of Denmark. Their journey began in 2005, without any knowledge or experience in whiskey production, but with the desire to produce a great (Danish) whiskey. It wasn't until 2011 that the first bottles came onto the market. It is not an Old World whiskey, nor is it a New World whiskey. Stauning calls their whiskies 'Our World Whisky'. At the time of launch, there was a huge upsurge in local ingredients and artisan producers, and Stauning was immediately noticed. Even with a production of 80,000 liters, they were unable to meet this requirement, so they opened their newly built, special distillery in 2018. However, they have retained their ethics, and their barley is sourced locally.
With Stauning Smoke, their flagship smoked single malt whiskey, Stauning has created a terroir whiskey that they think will blow you away. While maintaining their New Nordic philosophy, this is a single malt whiskey made from pure barley malt from West Jutland that is malted in-house on the ground. It is then smoked with locally harvested peat and heather. This local origin gives Stauning Smoke a flavor that can only be found there. They use double distillation in small stills heated by flames, and once the entire process is complete, the whiskey ages in first-fill bourbon barrels, first-fill Madeira barrels, first-fill Jamaica rum barrels, and Virgin American oak barrels.
Stauning Kaos
Basically everything Stauning is all about in one bottle. A little smoke, a little spice and a lot of complexity in a versatile New Nordic whisky. KAOS is an extremely versatile whisky, whether enjoyed neat, on the rocks or in a whisky cocktail. The choice is up to the connoisseur.
Nose: Grain, chocolate, oak, caramel, cinnamon and campfire smoke.
Palate: smoked chocolate with nougat, caramel, liquorice, sweet apple and oak
Finish: smoky with vanilla, orange, tobacco, dried red fruit and oak
Stauning Rye
Freshly baked Danish rye bread in liquid form? A Danish rye whisky with a warm, toasted flavour and a long, fruity finish.
This is no ordinary rye whisky. The combination of malted barley and rye, distilled in pot stills, results in a round, fruity and full-bodied whisky.
Nose: Freshly baked rye bread, wine gum and a hint of pepper.
Palate: Soft dried fruit, ripe cherries and peppery oak, balanced by vanilla and citrus peel.
Finish: Peppery with a long, soft, fruity and sweet finish.
Stauning Smoke
Stauning SMOKE epitomises Stauning's innovative New Nordic philosophy: made from local ingredients, malted in open fields, smoked over local peat and heather, distilled twice in small, flame-heated stills and matured in first-fill wine and spirit casks.
The result is an elegant, refined whisky with a smooth, smoky flavour.
Nose: Light bonfire smoke with citrus and honey notes.
Palate: Tobacco, nuts and vanilla. Fresh herbal notes follow.
Finish: Medium length.
Stauning HØST
Stauning HØST ist ein Blend aus Single Malt und Roggen-Malt-Whisky, der ausschließlich aus gemälztem Getreide hergestellt wird. Der Name "HØST" (ausgesprochen "Hurst") bedeutet auf Dänisch "Ernte". Dieser Whisky spiegelt die natürliche Schönheit des lokalen Terroirs und der Jahreszeit wider, die der Brennerei Stauning das dänische Getreide für die Herstellung des Whiskys liefert. Stauning ist bestrebt, einen Whisky herzustellen, der die Eleganz und Schönheit der Natur zum Ausdruck bringt, und jeder Schluck dieses Whiskys ist ein Geschmack der friedlichen dänischen Umgebung. Ein delikater, weicher und ausgewogener Whisky für Einsteiger und Kenner, der aus einer Kombination von in amerikanischer Eiche gereiften Whiskys und einem Hauch von Portweinholz hergestellt wird.

Abgang:
Der Abgang ist mittellang und lässt die würzigen und fruchtigen Noten dank derschönen Kombination von Getreide und dem Finish in Ex-Port Fässern noch langenachklingen.
