Moutai
Moutai is a baijiu, a Chinese schnapps produced in the city of Maotai or Moutai in the Chinese province of Guizhou. Made by the state-owned Kweichow Moutai Company, the drink is distilled from fermented sorghum, millet and wheat, the latter being used to promote fermentation. The manufacturing process takes five years, during which the drink is distilled nine times and aged in clay vessels.
Moutai originated during the Qing Dynasty, when distillers from northern China introduced advanced techniques into local processes to produce a particular type of baijiu. The government later combined the local distilleries into one state-owned company, Kweichow Moutai. Moutai was used on official occasions at banquets with foreign heads of state and high-ranking guests visiting China. It is the only alcoholic beverage that is presented as an official gift by Chinese embassies in other countries and regions.
Moutai
Over a billion people know it, and in China moutai is the national drink par excellence. In China, however, the schnapps distilled from millet and wheat is almost completely unknown. According to official records, the grain schnapps was already mentioned in the Qing Dynasty (1644 - 1911) and is still very popular in China today.
Nose: Moutai is still reserved on the nose and its grain bouquet is somewhat reminiscent of vodka with a small handful of fruit.
Palate: This is where it gets going, the Moutai initially flatters with delicately sweet notes, immediately followed by a very interesting spice mixture of grain, nuts and soya, followed by a hint of Williams pear, then a very distinctive spiciness and delicate bitter notes.
Finish: strong, spicy, hot and slightly bitter.
